The American Academy of Nutrition and Dietetics has estimated that the crop’s high levels of nitrogen could help to offset the negative effects of climate change.

The crops are being grown in Iowa, Nebraska and Wisconsin, but they’re also being grown on fields in Kansas, Colorado, Texas, Arizona and New Mexico.
